Bored of your usual carrot sticks and celery for your midday snacks? Mix it up with my tasty egg muffin recipe.
Surprisingly easy to make and bake – there’s no excuse not to make a batch of these and keep them in your kitchen, take them on the go, or leave a batch at the office.
Egg Muffins
Serves 6-8
You will need:
- 3 egg whites
- 3 eggs
- 1/2 onion (diced)
- 1 handful spinach (finely chopped)
- 1 pepper (diced)
- 1/2 cup of protein of your choice (tinned salmon/tuna etc)
- 1 tsp sea salt
To make:
Preheat a medium oven.
Whisk the eggs then add the other ingredients and mix well.
Place into a muffin tray/cases and bake for approx. 20 minutes.
Change it up!
The beauty of this tasty egg muffin recipe is that you can mix it up. Swap the protein for different tinned fish and swap or add other veggies like sweetcorn, tomatoes and cooked asparagus.
