It’s National Cupcake Week!
We all love a bit of a treat now and again but what if I told you, you could get the same fulfillment from something that’s completely healthy and good for you?
Cupcakes don’t always have to be crammed full of sugar and full of e-numbers, so whilst you’re tuning into The Great British Bake Off, make tonight the night you try something new.
Don’t believe me? Try these two alternative recipes below to fix your sweet-tooth, stop your cravings and fill you up!
Egg Muffins
Serves 6-8
You will need:
- 3 egg whites
- 3 eggs
- 1/2 onion (diced)
- 1 handful spinach (finely chopped)
- 1 pepper (diced)
- 1/2 cup of protein of your choice (tinned salmon/tuna etc)
- 1 tsp sea salt
To make:
Preheat a medium oven. Whisk the eggs then add the other ingredients and mix well. Place into a muffin tray/cases and bake for approx. 20 minutes.
Rhubarb and Ginger Crumble
Ingredients (Filling)
- 450g rhubarb- chopped and trimmed
- 1/2 pint of water
- 1/2 teaspoon of ground ginger
- 1 tablespoon agave nectar
Ingredients (Topping)
- 100g rolled oats
- 40g desiccated coconut
- 1 tablespoon agave nectar
Method
- Preheat the oven to 200*
- Stew the rhubarb in the water and add the ginger
- Once cooked stir in the agave nectar and transfer to an oven proof dish
- Spoon the topping mixture into the dish and cook for 20 minutes
