Healthy Dessert Recipe – Easy Rhubarb Crumble

If you’ve got a sweet tooth, then this healthy dessert recipe is for you! It’s Rhubarb and Ginger Crumble and it is super easy to make.

When you’re in need of a treat, making fresh is always best, avoid the processed ready-made desserts in a box and get stuck in, there’s no excuse when it’s so simple and tastes amazing!

Rhubarb & Ginger Crumble

Ingredients (Filling)

  • 450g rhubarb- chopped and trimmed
  • 1/2 pint of water
  • 1/2 teaspoon of ground ginger
  • 1 tablespoon agave nectar

Ingredients (Topping)

  • 100g rolled oats
  • 40g desiccated coconut
  • 1 tablespoon agave nectar

Method

  1. Preheat the oven to 200*
  2. Stew the rhubarb in the water and add the ginger
  3. Once cooked stir in the agave nectar and transfer to an oven proof dish
  4. Spoon the topping mixture into the dish and cook for 20 minutes
