I’m tired of hearing people say that being healthy has limitations… in an ever-growing ‘health aware’ society, there have never been so many choices on offer! Whether you’re eating out or cooking from scratch in your own kitchen, I’ve created the perfect healthy menu so you can see you’re never short of options.

The price of healthy food isn’t extortionate by any means and you can save even more money buy cooking in bulk and freezing pre-prepped meals.

I love making chicken or turkey curries in the slow cooker, if you do too, then why not try this recipe (all you have to do is chuck it all in the slow cooker on a low heat)…

Turkey Curried Squash – What does a Personal Trainer Eat?

Serves 2

You will need:

  • 2 turkey breasts (diced)
  • 1 diced onion
  • 1/2 can coconut milk
  • 2 gloves of garlic chopped
  • 1 de-seeded chili pepper
  • 1 tsp ginger
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • 1/2 tsp coriander
  • 1 tbsp olive oil
  • 1 tin chopped tomatoes
  • 1 butternut squash peeled and diced
  • 2 cups of cooked lentils
  • 2 cups spinach
  • 1 cup peas
  • 1 sprig of fresh mint
