If I told you four simple ingredients would make the nicest healthy mackerel pate recipe, would you make it fresh?
Get some cooked smoked mackerel fillets from your local supermarket or fishmongers and grab these three ingredients from your kitchen:
Reduced Fat Creme Fraiche
Black Pepper
Lemon Juice
(Add salt later to taste but it isn’t essential)
METHOD:
Remove skin from smoked mackerel fillets
Break up the fish with your hands and place into a bowl
Add a large dollop of reduced fat creme fraiche
Add approximately a teaspoon of lemon juice (some people like more and some like less)
Crunch a healthy dose of black pepper to the mix
Use the back of a fork to crush the ingredients together and mix until you get a nice mackerel pate consistency
(I like it quite chunky, hence the lack of blender-usage!)
Your mackerel pate will then be ready to scoop into a fresh dish, onto rice cakes, or as a chunky dip for raw veggies.
It makes for the perfect snack or a more substantial lunch.
